The name “Warajiya” translates to “straw sandals,” reflecting its centuries-old heritage. In fact, they offer only one set menu: the “Uzousui Course,” where the “U” stands for unagi (eel) featured in every dish.
The meal begins with Unabe (Eel Hotpot), a comforting and fragrant dish. The eel is grilled, deboned, and simmered in a savory broth with local Kujo leeks, seitan, and noodles. It is traditionally enjoyed with a dash of sansho pepper for a zesty kick.
Next comes the signature Uzousui (Eel Congee), a rich egg porridge packed with tender unagi, shiitake mushrooms, green onions, burdock root, rice cakes, and carrots.
